What’s for Dinner?

Here are simple recipes, without the commentary. All picked by Sean!

 

Orange “Chicken” 

1 medium head cauliflower

1/2 cup flourasdf

1/2 cup unsweetened almond milk

1/4 teaspoon sea salt

1/2 teaspoon ground black pepper

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes

1 cup bread crumbs

Orange Sauce

½ cup water

Fresh Orange juice from 2 oranges

2 tablespoons maple syrup

¼ teaspoon ground ginger

¼ teaspoon garlic powder

2 tablespoons low sodium soy sauce

2 tablespoons white vinegar

1 tablespoons cornstarch + 1 tablespoon water (stirred together until cornstarch is dissolved)

  1. Preheat oven to 450
  2. Mix all of the ingredients for the batter in a bowl.
  3. Add bread crumbs to a second bowl
  4. Cut up cauliflower head into bite size pieces
  5. Dip cauliflower pieces into batter, then into bread crumbs
  6. Place on a greased, foil lined baking sheet
  7. Bake for 22 minutes
  8. While that is baking throw all ingredients for your sauce into a small saucepan.
  9. Bring to a boil and simmer for 3 minutes.
  10. Remove sauce from heat and set aside to cool
  11. When cauliflower is done, toss with sauce and place back on baking sheet for an additional 5 minutes in the oven.
  12. Pair with your favorite rice dish and enjoy!

AHHHHHHmazing Butternut Squash Soup

1 Tablespoon ButterButternut Squash Soup

1 Medium Onion, Chopped

1 Butternut Squash (2-3lb, peeled, cubed)

2 cups water

½ Teaspoon dried marjoram leaves

¼ Teaspoon black pepper

1/8 Teaspoon Cayanne Pepper/Chilli Powder/ Paprika

4 Chicken Bouillon Cubes

1 Package Cream Cheese (8oz)

  1. In a skillet, melt butter over medium heat. Add onion and cook until crisp-tender aka brown.
  2. In a 3-4 quart slow cooker, mix onion and remaining ingredients except cream cheese
  3. Cover; cook on high for 3 hours or until squash is tender enough to smush
  4. In a blender or food processor, place half of the mixture at a time. Cover and blend until smooth.
  5. Place back in the slow cooker. Stir in cream cheese. Cover and cook on low for about 30 more minutes or until cheese is completely melted in.

Note:   While cream cheese is melting, bake the seeds!

  1. Clean seeds in warm water
  2. Combine in a bowl with 1 tbsp olive oil & 1 tsp garlic salt
  3. Place on a foil lined baking sheet
  4. Bake at 375 degrees for 10-15 minutes or until just brown

Healthy Chicken Parmesan:Chicken Parm-2

3- 4oz chicken breasts

3/4 cup marinara sauce

3/4 cup low moisture- part skim mozzarella

3 tsp garlic salt

3 tsp Italian seasoning

  1. Preheat oven to 375
  2. Season chicken with garlic salt and seasoning
  3. Place chicken in glass baking dish, cover evenly with marinara sauce
  4. Bake for about 45 minutes
  5. Cover each breast with cheese and bake for another 5 minutes
